6 oz. bulk sweet Italian sausage
2 tbsp parsley
1/4 cup finely chopped onion
40 wonton wrappers
4 oz Mozzarella cheese, shredded
cooking oil for deep frying
2 tbsp grated Parmesan cheese
Spaghetti sauce, optional

Filling: Cook the sausage and onion over medium heat until sausage is brown and onion is tender, stirring to break meat into small pieces; drain well. Cool completely. Stir in Mozzarella cheese, Parmesan cheese, and parsley.

Place one rounded tsp of filling in center of wonton wrapper. Moisten the edges of the wrapper with water. Starting with one corner, fold the wrapper over the filling forming a triangle. Press to seal well. Bring the two other pointed ends of the wonton wrapper up over the stuffed center. Moisten and press together. Cover and chill if not frying right away.

Fry wontons, a few at a time, in deep hot oil 1-2 minutes. Serve with Spaghetti sauce for dipping.
