1 envelope dry Italian salad dressing mix
1/2 cup oil
1/4 cup white vinegar
2 tbsp water
2 tbsp scallions, or green onions, minced
1 1/2 tsp sugar
1 (8 oz) pkg EACH Monterey jack, sharp cheddar and cream cheese
1 (4 oz) jar pimientos, diced and drained
Combine first 6 ingredients in a small jar, cover tightly and shake to blend. Set aside.
Cut cheeses cross-wise into 1/4 inch strips. Cut each strip in half to form 2 squares. Assemble slices like dominoes in 2 rows in a 2 quart dish, alternating each type of cheese side by side.
Pour marinade over cheese. Cover and refrigerate overnight. Drain and arrange on a platter in rows. Top each row with diced pimientos, and fresh parsley sprigs. Serves with crackers.
