1 lg pkg pepperoni, sliced
3 cups mozzarella cheese, shredded
2 jars spaghetti sauce
1 lb rotini pasta, cooked al dente
1 large onion, chopped
1 (4 oz) can sliced mushrooms, drained and sliced black olives, drained
Parmesan or romano cheese, grated

In a large casserole dish, layer pasta, vegetables, pepperoni and sauce. Mix well. Bake at 350 for 30 minutes or until it begins to bubble. Remove from oven, layer the top with mozzarella cheese, bake until cheese melts and browns slightly around edges. Remove from oven, add grated cheese and let rest about 5 minutes before serving.
