1/2 lb cooked chorizo or pepperoni
3 tbsp butter
2 cloves garlic, minced
8 oz sliced fresh mushrooms
11 oz jar salsa
8 flour tortillas
2 1/2 cups shredded cheese, divided
Toppings: Green onions and red pepper, chopped, Picanta sauce, Sour cream, Shredded lettuce, additional shredded cheese

In a large skillet, melt butter and cook garlic and mushrooms until mushrooms are tender. Add sausage until done; remove from skillet and set aside.

Wipe skillet clean. Place four tortillas on lightly greased baking sheet. Layer 1 cup cheese, and sausage mixture over tortillas, dividing equally. Top with remaining tortillas. Brown each quesadillas on both sides. Cut into wedges. Serve. Pass the toppings.
