2 1/4 lb beef tenderloin
1/4 cup butter and beef stock
1/2 - 1 tsp salt
1 tbsp pepper
1/2 cup sour cream

Trim tenderloin and coat with salt and pepper. Heat butter in a heavy frying pan and brown tenderloin. Transfer to a baking dish and roast at 320 for 20 minutes or until done at desired stage. Remove meat from pan; keep warm.

Add beef stock to baking dish and scrape up all drippings in the pan. Pour beef dripping mixture into a heavy frying pan where tenderloin was browned. Heat thoroughly and add sour cream. Remove from heat and stir to blend. Slice tenderloin and pour sour cream sauce on top. Serve hot.
