CHUNKY MAPLE APPLE AND WALNUT COOKIES

1 cup flour
1/4 teaspoon baking soda and cinnamon
8 tablespoons butter, softened (use salted or use unsalted and add 3/8 tsp. salt)
1/4 cup sugar
1/2 cup firmly packed light brown sugar
2 tablespoons no-sugar added applesauce
1 large egg
2 teaspoons maple syrup
1/2 teaspoon vanilla extract
3/4 cup quick-cooking or old-fashioned oats
1/2 cup green apple, peeled and diced
1/4 cup walnuts, toasted and chopped
1/4 cup raisins, preferably the pre-plumped “baking raisins”

Preheat oven to 350. Line two cookie sheets with parchment. Stir together flour, soda and cinnamon.

In a large bowl, cream butter and both sugars. Beat in applesauce. Beat at medium speed, scraping bowl often, for about two minutes. Add egg, maple syrup and vanilla and continue beating until well mixed. By hand, stir in flour mixture until incorporated. Stir in oats, apple, walnuts and raisins.

Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 10-13 minutes or until edges are lightly browned. Cool completely.
