1 cup sugar (can add in more while cooking the filling)
3 1/2 tbsp cornstarch
1 1/2 tbsp lemon zest
1/2 cup fresh lemon juice
3 egg yolks, slightly beaten
3/4 cup half and half
1/4 cup heavy whipping cream
1/4 cup butter, cut into pieces
1/3 cup sour cream
1 (9-inch pie) baked pastry baked and cooled
Sweetened whipped cream

In a large microwave-safe bowl, whisk together the sugar with cornstarch, lemon zest, lemon juice, egg yolks, light cream and whipping cream.

Microwave on HIGH removing every minute to stir; cook until thickened and bubbly (this will not take long). Stir in butter until melted, the stir in the sour cream until well blended. Pour into cooled pie crust. Refrigerate until cold. Top with sweetened whipped cream.
