Be sure to wash and dry greens (and tear into bite-size pieces, if necessary) before tossing with remaining ingredients.
1 head Bibb lettuce
1 pint grape tomatoes or cherry tomatoes, halved
3/4 cup Creamy Garlic Dressing
8 oz bacon (8 slices), fried crisp and crumbled
2 ripe avocados, pitted and cut into 1/2-inch pieces
Toss lettuce and tomatoes with dressing. Add bacon and avocados last. Serves 4 to 6
Creamy Garlic Dressing
Do not substitute lowfat or nonfat sour cream or mayonnaise here--the dressing will become harsh. This creamy, assertive dressing pairs well with bitter greens like escarole or chicory.
3/4 cup extra-virgin olive oil
6 tbsp sour cream or mayonnaise
3 tbsp fresh lemon juice
4 tsp Dijon mustard
1 tbsp white wine vinegar
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp ground black pepper
Whisk all of the ingredients together until smooth. The dressing, covered, can be refrigerated for up to 4 days; whisk to recombine before using. Makes about 1 1/2 cups
