3 cups black beans
1 cup diced red and green bell peppers
1/2 cup diced red onion
1/2 cup diced carrot
1/2 cup roasted sweet corn
1/2 cup diced celery
1 tsp minced fresh garlic
1 cup red wine vinaigrette
Salt & ground pepper

Combine all ingredients and refrigerate over night. Serve chilled or at room temperature with chicken, fish or as a salad.

Add 1 tbsp fresh chopped cilantro, 1 /4 tsp cumin and 1 minced jalepeno pepper for a Tex-Mex flavor.
