13-ounce can black beans, drained and rinsed
3 tablespoons extra-virgin olive oil
1/2 cup thinly sliced green onions, including 1 inch of green parts
1 red bell pepper, seeded, deribbed and diced
2 cloves garlic, minced
1 jalapeno chili, seeded and minced
1 cup fresh or frozen corn kernels
1 teaspoon ground cumin
1/4 cup fresh cilantro leaves, minced
Salt and freshly ground pepper

Put the beans in a medium bowl and toss with the olive oil. Add the green onions, bell pepper, garlic, jalapeno and corn; toss to blend. Season with cumin, cilantro, salt and pepper.
