4 boneless, skinless chicken thighs
2 tbsp oil
1 clove garlic, minced
1 onion, sliced
1 green pepper, sliced
1/2 lb sliced mushrooms
1 (28 oz) jar spaghetti sauce
1 cup mozzarella cheese
4 large slices crusty Italian bread, lightly toasted

In a skillet, heat oil and add sliced vegetables, sauteing until tender. Remove from pan and add chicken. Cook 3 minutes per side. Stir in sauce and sauteed. Cover and cook for 20 minutes. Divide cheese over chicken and cover. Cook for 1 minute or until cheese has melted slightly. Top each slice of toast with chicken. Top with sauce
