1 cup couscous
Salt and pepper
2 cups boiling water
1 tbsp extra-virgin olive oil
1 cup diced tomatoes, 1 inch pieces
1/2 cup chopped parsley
1-3 tbsp lemon juice
2-3 dashes hot sauce
1/2 cup Bistro Tomato Salad dressing

In a large bowl, mix the couscous with 1 tsp salt. Pour in the water and oil. Cover; let sit for 10 minutes. Lightly fluff the couscous with a fork, and then add remaining ingredients. Stir gently with a fork and check seasoning and if necessary adjust by adding salt, pepper, hot sauce, lemon juice and dressing to taste.

Cover and chill in the refrigerator 2-6 hours before serving. Just before serving, taste for an additional adjustment of seasonings. Serves 4
