1 cup water
1 cup couscous
1 tomato (diced)
1/2 cucumber (chopped)
1 tablespoon red onion (sliced)
1 handful sun dried black olives (pitted and chopped)
1 tablespoon feta cheese (crumbled)
1/2 tablespoon olive oil
1/2 tablespoon red wine vinegar (or lemon juice)
1 dash oregano
salt and pepper to taste

Bring the water to a boil in a small sauce pan and turn off the heat. Mix in the couscous, cover and let sit for 5 minutes.

Mix in the tomato, cucumber, red onion, olives and feta. Mix the oil, vinegar, oregano, salt and pepper in a small bowl. Pour the dressing onto the salad and mix.
