- 4 cups evaporated milk
- 2 cups peeled and diced potatoes
- 1 teaspoon garlic powder
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 teaspoons sugar
- 2 cans (15 ounce size) cream-style corn
- 1 teaspoon Louisiana hot sauce
- 2 pounds shrimp, peeled and deveined, chopped if large
- 1/4 cup chopped green onions
Combine the milk, potatoes, garlic powder, Cajun seasoning, salt, pepper, and sugar in a large saucepan over medium heat. Cook, stirring occasionally, for 10 minutes. Add the corn and hot sauce. Increase the heat to a strong simmer and stir in the shrimp and green onions. Cook for 2 minutes or until the shrimp is cooked through. Serve hot. Adjust the seasoning as needed.
