2 tsp parsley
4 cups chicken broth
2 1/2 cups diced potatoes
1 cups chopped celery
1/2 cup chopped onion
2 cans cream of chicken soup
1 cups chopped fresh mushrooms
1/2 lb Velveeta and Monterey jack cheeses, cubed
1 pkg frozen mixed carrots, broccoli and cauliflower
1/4 head cabbage, coarsely chopped (optional)
1 pkg smoked sausage, cubed (optional)

Combine first 5 ingredients in a Dutch oven and simmer for 20 minutes or until vegetables are fork-tender. Add soups and stir until well blended. Add remaining ingredients and cook over low heat for an additional 30 minutes, stirring occasionally. Serves 12 14
