6 cups rotini, cooked al dente
6 cups frozen mixed vegetables
2 cups cheddar cheese, shredded
1 cup evaporated milk
14 oz can tomato sauce
1/2 tsp dry mustard
1/4 tsp pepper and fresh chopped parsley
While pasta is cooking, add the frozen vegetables the last minute of cooking. Drain; return to pot. In a saucepan, stir together 1 3/4 cup cheese, milk, sauce and spices over medium heat for about 5 minutes or until cheese is melted. Add to pasta mixture. Sprinkle with remaining cheese and parsley.
