18 wonton skins
1 tbsp butter, butter
1 egg
1 tsp butter
3/4 cup chopped broccoli
1/4 cup chopped roasted red bell peppers or chopped pimento, drained
1 cup finely shredded sharp cheddar cheese
1/4 tsp onion powder and dry thyme leaves
1/8 tsp pepper

Preheat oven to 350. Spray miniature muffin pan with cooking spray. Brush one side of each wonton with butter. Carefully press, buttered side up, into sprayed muffin cups.

In a medium bowl, combine egg and flour and beat with a whisk until blended. Stir in remaining ingredients; mix well. Spoon mixture into cups and bake for 15-20 minutes or until mixture is set and wonton skins are golden brown. Immediately remove from muffin cups and serve warm.
