1 cup finely chopped celery
1/3 cup finely chopped green pepper
1/2 cup thinly sliced scallions, including about 1 inch of the green stems
1/4 cup finely chopped parsley
1 lb lump crab meat, cooked, or the canned variety
1 1/2 cup crushed soda crackers
1/2 tsp salt and dry mustard
Pepper and hot sauce, to taste
1/4 cup heavy cream
1/2 cup melted butter
Topping
1/4 cup crushed cracker crumbs
1/4 cup melted butter
Preheat oven to 350. In a large bowl, combine ingredients. Mix gently but thoroughly being careful not to break up the crab to much. Taste for additional seasoning.
Spoon mixture into a buttered casserole dish and sprinkle with remaining cracker crumbs evenly over the top. Drizzle with melted butter. And bake in the upper third of the oven for about 30 minutes, or until the crumbs are golden brown. Serve at once.
