1 small onion, diced
2 cloves garlic, diced
3 tbsp butter
12 oz small mushrooms, diced
2 tbsp chopped parsley
Cayenne and black peppers
8 oz bay scallops and crabmeat
Juice of 1 lemon
3/4 cup white wine
6 (4 oz) flounder fillets

Preheat oven to 350. Saute onion and garlic in butter. Add mushrooms and parsley, simmer, stirring occasionally, 5 minutes. Add a pinch of each seasoning. Stir in seafood. Simmer, stirring occasionally, for 7 minutes. Add lemon juice and wine.

Place 3 fillets in a shallow baking dish and spoon the stuffing over each; top with the remaining fillets. Bake, covered, for 15 minutes. Serves 6
