1 lb boneless sirloin steak
1/2 tsp each salt and pepper
1/2 cup pesto sauce
1 (12 oz) jar roasted red bell peppers, drained and sliced
14 1/2 oz can petite diced tomatoes, undrained
1/4 cup dried tomatoes in oil, drained and chopped
2 tbsp chopped fresh basil
1/4 tsp dried crushed red pepper
1/3 cup freshly grated parmesan cheese
3 tbsp olive oil

Place steak between 2 sheets of heavy-duty plastic wrap, and flatten 1 1/4 inch thickness, using a meat mallet or rolling pin. Sprinkle with salt and pepper. Spread with pesto over steak. Pat peppers dry with paper towels; arrange over steak. Roll steak, jelly-roll fashion, starting with a long edge; secure at 2 inch intervals with twine or wooden picks. Cut into 4 equal pieces.

Combine diced tomatoes and next 3 ingredients in a medium saucepan. Bring to a boil; reduce heat, and simmer 10 minutes, stirring occasionally. Remove from heat; stir in cheese. Meanwhile, heat oil in a large skillet over medium-high heat 1 minute. Add beef rolls; cook 8-10 minutes or until done, turning to brown on all sides. Arrange rolls on individual serving plates, and top with tomato mixture. Serves 4
