1 cup fresh spinach leaves
1/2 (14 oz) can quartered artichokes, chopped
1 tbsp grated Parmesan cheese
1 clove garlic, minced
1 tbsp chopped fresh parsley
2 tbsp Italian-style bread crumbs
1 tbsp olive oil, divided
1 1/2 lbs flank steak

Combine spinach through breadcrumbs in a medium bowl; stir in 1 tsp oil. Pound flank steak to 1/2 inch to allow for easier rolling. Place the flank steak in a large baking dish. Sprinkle spinach mixture evenly over the steak to cover the top. Starting with the long edge, roll up steak, and tie tightly with twine to secure. Heat remaining oil in a large nonstick skillet over medium-high heat. Brown steak on both sides about 5 minutes. Place on a baking sheet and bake at 450 for 15 minutes or until desired degree of doneness. Let rest for 3 to 4 minutes. Remove twine and slice evenly. Serves 4-6
