1 favorit recipe for pizza crust dough, (I get mine from the local pizzeria)
3 tsp blackening seasoning, divided
1 boneless, skinless chicken breasts, pounded to 1/4 inch thickness
4 tbsp butter, divided
4 clove garlic, minced
1 shallot, minced
2 tbsp flour
1/4 cup white wine
3/4 cup whole milk
2 tbsp minced fresh basil
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup fresh spinach
8 slices bacon, cooked and crumbled
1 cup grated parmesan cheese
Press pizza dough onto pizza pan or stone; cover and set aside.
Sprinkle 2 tsp seasoning over chickening. In a large skillet, melt butter over medium heat. Add chicken and cook for 2-3 minutes per side or until chicken is done. Remove from heat and cool. Cut into thin strips.
In same skillet, melt remaining butter and add garlic and shallot; cook for 2 minutes. Stir in flour and cook for 2 minutes; stirring constantly. Gradually whisk in wine and milk. Cook, whisking constantly, for 4-5 minutes, or until thickened. Stir in basil and remaining blackening seasoning. Remove from heat.
Preheat oven to 450. Spread cream mixture over pizza crust and sprinkle with 1 cup mozzarella cheese. Top evenly with spinach, chicken strips, bacon, remaining cheeses and bake for 15-20 minutes or until lightly browned. Cut into wedges.
