4 lbs catfish fillets
1 cup milk, for soaking
1/2 cup flour
1 1/2 cups cornmeal
Salt and pepper
2 tsp crab and shrimp seasoning (see recipe file under seasonings) or Old Bay
Oil for deep frying

Cut fillets into serving pieces. Soak the fish in the milk for about 1 hour. Heat oil in deep fryer to 350. Mix the remaining ingredients together in a bowl. Drain fish and dredge in mixture. Fry the fish until golden brown. Preheat the oven to 200. Drain cooked fish on paper towels to soak up oil. Keep the fish warm in the oven while cooking remaining fish.
