Makes: about 10 servings
2 1/2 pounds ground beef
1 can (28 ounces) diced tomatoes
1 can (about 33 ounces) salsa (medium) or substitute fresh salsa
1 can (10 3/4 ounces) tomato soup
1 1/2 cups tomato juice
3/4 cups chopped onion
3/4 cups chopped celery
1/2 cups chopped green bell pepper
1/2 tablespoon freshly chopped garlic
3 to 4 tablespoons chili powder (to taste)
3 tablespoons ground cumin
2 tablespoons beef base
Hot sauce to taste (your favorite brand)
3/4 teaspoon season salt
3/4 teaspoon black pepper
1 can (27 ounces) chili beans in sauce
In a large pot, brown beef. Drain off any excess liquid, then add all remaining ingredients except beans. Simmer 2 1/2 to 3 hours, stirring every 10 to 15 minutes. Add beans and heat through.
