Chilled Mediterranean Potato Salad

This recipe is mayonnaise-free and perfect for hot outdoor picnics, parties and potlucks.

Ingredients
12 each medium red potatoes, cubed into 1-inch pieces
3 Tbsp Dijon mustard
2 Tbsp sour cream or Greek yogurt
2 Tbsp red wine vinegar
1 tsp sugar
1/2 tsp paprika
1/4 tsp each salt and pepper
1 each jarred roasted red pepper, chopped
1/2 red onion, finely chopped
2 Tbsp chopped fresh basil

Directions
1. Place cubed potatoes in a pot and cover with water. Bring to a boil, reduce heat to low, cover pan and simmer until potatoes are tender about 10-12 minutes.
2. In a bowl combine the sour cream/yogurt, vinegar, sugar, mustard, salt, pepper, and paprika.
3. Toss the roasted red peppers and onions into the potatoes, then add in the dressing and toss to coat.
4. Garnish with fresh herbs. Cover and chill 2-3 hours before serving.
