2 teaspoon extra virgin olive oil
1 white onion, diced
1 head of cauliflower, broken in florets
3/4 cup evaporated skimmed milk
3 cups fat free low sodium chicken broth
salt and pepper to taste.
a pinch of nutmeg (optional)
Parsely

Preheat a large nonstick saucepan or dutch oven. Pour in the olive oil and swirl to coat pan.

Saute the onions, stirring constantly until tender, about 5 minutes.

Add the cauliflower and cook stirring until heated through.

Add the broth and bring to a boil.
Reduce the heat to medium-low and simmer covered until the vegetables can be easily smashed.
Transfer to a blender and puree.
(Be careful blending hot ingredients because it will sprew out of top of blender. Place kitchen towel over lid and hold it on while you blend.)

Pour puree back into pan. Over low heat, stir in milk, pepper, salt and nutmeg. Heat to serving tmeperature.
Garnish with the parsley.
