Cauliflower Cheddar Soup

Ingredients

3 springs of fresh thyme
1 small head cauliflower (about 2 pounds) cut into 1 " pieces
2 cups water
1 clove garlic, minced
1 medium onion, chopped
2 tablespoons unsalted butter
2 tablespoons all purpose flour
1/4 teaspoon pepper
1/8 teaspoon cayennne pepper
1 can (14oz) low sodium chicken broth
1/2 cups heavy whipping cream
1 (8oz) package shredded cheddar cheese


In a saucepan combine, thyme, caulifower and water. Heat to boiling over medium heat. Reduce heat to low and cook covered for about 8 minutes or until cauliflower is tender. Remove and discard thyme springs

In a blender on low speed blend mixture in small batches until well blended.
(Leave the center part of blender lid open and put a clean kitchen towel over opening to allow steam to escape) If you have an immersion blender, that works great, too.)

In the same saucepan. cook garlic and onions with butter over medium heat until onions are tender. 5-7 minutes.
Whisk in flour, pepper, and cayenne. Cook 1-2 minutes or until mixture bubbles, stirring constantly. Slowly add the broth and cream, then the cauliflower mixture. Heat to boiling. Add the cheese and stir until cheese melts.
