1 small cauliflower (1 1/4 lb)
Small onion, thinly sliced
1/4 tsp dried thyme leaves
2 Tbsp butter
2 c. chicken broth
1 Tbsp flour
1 tsp salt
Dash nutmeg
Dash white pepper
2 c. half-n-half
1/2 c. shredded fontina cheese
Separate cauliflower into small flowerets. Combine in saucepan with onion, thyme and chicken broth. Simmer until cauliflower is tender, about 10 minutes. Remove and reserve about 1/3 of the cauliflower. Blend rest of cauliflower until smooth. Melt butter. Stir in flour, salt, nutmeg & pepper. Cook until bubbly. Add half-n-half. Cook, stirring constantly to boiling. Add blended cauliflower and cheese. Heat until soup is steaming and cheese melts. Do not boil. Add reserved cauliflower.
