Fish Tacos on a Bed of Chorizo, and Egg Ramen Noodles

1-lb of Flounder, Tilapia or your favorite white fish
1-10oz pckge of Beef, or Pork Chorizo
2-3oz pckges of Ramen Noodles (any flavor)
Corn Tortillas
6-eggs
1/2 stick of butter (unsalted)
2-Tblspns of White wine vinegar
1-clove of Garlic (minced)
2-Tblspns Cummin
2-Tblspns Chili Powder
2-Tblspns Onion Powder


First make the Ramen Noodlesin a med. sauce pan(Just follow pckge instructions).Then in a fry pan cook the Chorizo, mashing and chopping with a Spatula or wooden spoon until thoroughly, but not overly cooked. Then take six eggs(whisk eggs in a bowl until completly scrambled) and pour over Chorizo and scramble together until cooked. Them mix into sauce pan with Ramen noodles and mix thoroughly, then set aside....Now in a fry pan place butter, and White Wine Vinegar together making a frothy reduction, then add garlic, cummin, chili powder, and a pinch of salt! Stir a little to blend ingredients and then add Fish Fillets. Cook on each side for 3 minutes.


Now in a plate, make a bed of the Ramen Noodle,and Chorizo Mixture, and place Fillets on top. Now quickly while fry pan is still hot with Butter reduction,add corn tortillas and cook on both sides until they bubble a little, then plate and serve.
