Ingredients:

2 cups frozen honeydew melon (not thawed)
4 Tablespoons coconut cream (recommend Coco Real Brand)
1 heaping Tablespoon light brown sugar
1 Tablespoon plus 1 teaspoon fresh lime juice
2/3 cup pineapple juice
lime slices for garnish
4 martini glasses frozen

Preparation:

Put all ingredients except lime slices in blender and liquefy until smooth.

Pour into glasses and garnish with lime slice.

Cooks Notes - Last summer I got the most beautiful honeydew at the farmers market. I would cut it up and put in the blender with some coconut milk and freeze it into cubes for my grandson who was teething. I still had two batches in the freezer and was longing for that summer taste, so I came up with this. While we had it this morning at breakfast, I thought if I add some white rum it would make a lovely cocktail. So we of course had to try it, but waited until 12:01pm. Either way, it will transport you to the tropics.
