Green Beans and Onions
2 pounds green beans, young, tender ones if possible, washed and trimmed
6 tablespoons butter
2 small onions, thinly sliced
1 large garlic clove
1/2 teaspoon salt
2 tablespoons sesame seeds
8 tablespoons chopped fresh parsley
In a large pot, bring 3 quarts of salted water to a boil. Add beans. Reduce heat and simmer beans until just tender, 15 to 20 minutes.
Drain and set aside. Melt butter in a large skillet. Add onions and stir constantly over medium heat 1 minute. Crush garlic and add to onions. Add beans and toss lightly over medium heat until coated with butter.
Preheat oven to 350 degrees. Toast sesame seeds 5 minutes, being careful not to burn them. Add sesame seeds and parsley to green beans, toss lightly, and serve at once.
Serves 8.
