Breakfast Acorn Squash Muffins

2 1/2 cups all-purpose flour
2 tsps. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs, beaten slightly
1 cup mashed acorn squash
1 tbsp. margarine
1 cup sugar

Preheat oven to 400 degrees. Grease or line muffin pans.

Combine flour, baking powder, baking soda, and salt in large mixing bowl and mix. Add eggs, mashed squash, butter, and sugar and beat until mixed, the batter should not be smooth. Fill muffin cups almost to the top by spooning in batter.

Bake for about 15 minutes or until an inserted toothpick comes out clean. Remove from the oven and serve warm.
Yields 12 muffins.
