Yield: 2 loaves
1 package (1/4 oz) active dry yeast
2 c warm water (110 to 115F)
1 c whole wheat flour
1/4 c butter , melted
1 T brown sugar
2 t salt
4-1/2 to 5 c AP flour
In a bowl, dissolve yeast in water.
Add wheat flour, 2T butter, brown sugar, salt and 2c AP flour; beat until smooth.
Add enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until elastic, 6-8 min.
Place in a greased bowl, turning once to grease top.
Cover; let rise in a warm place until doubled 1 hr.
Punch dough down.
Shape into two 6" rounds; place on greased baking sheet.
Cut slashes in top with a knife.
Cover; let rise in warm place until doubled 40 min.
Bake 400F 40-45 min until golden brown.
Brush with remaining butter.
