makes 15

1 T butter and dash of oil
4 oz red potatoes, 1/4" dice
3 oz cream cheese, soft
2 T onion, minced
1/3 c parmesan, grate
2 T mayo
1 T parsley
1 t lemon zest
8 drops tabasco
1/2 t salt
6 oz jar marinated artichoke hearts
15 mini phyllo cups

use wontons or (stabbed)puff pastry if no phyllo.
Med-high, sautee potatoes shaking pan until potatoes are golden and crisp.
Dice artichokes into 1/4" pieces.
Mix cream cheese, onion, Parmesan, mayo, parsley (15 for garnish), zest, Tabasco, salt.
Fold in artichoke hearts and cooked potatoes.
Generously fill mini Phyllo cups (or use won ton wrappers).
Bake on sheet 375F 8-10 min until filling is hot and shells are crisp.
