  • 2 pounds fresh peaches, peeled and thickly sliced
  • 3 cups sugar
  • 1 cup honey
  • 1/2 cup water
  • 2 pieces (3 inch size) stick cinnamon

Combine peaches, half the sugar, honey, water and cinnamon in a Dutch-oven. Bring to a boil, stirring constantly until sugar melts. Reduce heat and simmer 15 minutes: stirring frequently. Remove from heat. Let stand 1 hour.

Add remaining sugar and bring to a rapid boil; stirring constantly until sugar melts. Boil uncovered until mixture registers 221 degrees F on a candy thermometer: stirring frequently. Remove from heat.

Skim off foam and remove cinnamon sticks. Immediately spoon in to hot sterilized jars leaving 1/4 inch head space. Wipe jar rims. Cover with metal lids and screw on bands. Process in boiling water bath for 15 minutes.
