Ingredients 500 gm

Fresh mango 450 gm
White vinegar 60 ml
Crashed red chillies 3 ml
Cardamom 5
Cloves 5
Peppercorn 6
Black onion 1 tsp
Granulated sugar 175 gm
Fresh ginger(thinly sliced) 5 cm
Garlic 2 cloves
Oil 2 tbsp
Cumin roasted 1 tsp
Mot herd:
Cut mango cubes without skin and stone(2)Heat a pan add oil add the crushed chillies,cloves,peppercorn,cardamom,cumin and black onion seed,salt and sugar.place low heat and simmer to infuse the spice in the vinegar about 20 minute(3)Add the mango,ginger,garlic.simmer until the mango is mushy and most of the vinegar has evaporated.When cool.pour into sterilized bottles.cover and leave for a 20 days before serve
