Makes 10 servings
Complete overnight or 1 hour 45 minutes

3 large cucumbers, thinly sliced
2 tsp salt
3 Tbsp fresh lemon juice
1 Tbsp vegetable oil
1 Tbsp sugar
2 Tbsp chopped fresh dill
1/2 cup thinly sliced red onion

Toss cucumbers with salt in a large bowl. Place a plate directly on surface of cucumbers, weigh bowl with a 1 lb can. Let stand 1-2 hours, drain in colander; rinse well.
Combine lemon juice, oil, sugar and dill in a medium size bowl. Mix onion and cucumber. Refrigerate overnight. Serve cold or at room temperature.
