I'm a pasta freak, gnocchi is one that I usually make fresh, but with this soup you can use frozen. I suggest staying away from the unrefrigerated kind it tends towards mushy.
Ingredients
1(32 oz) jar of prepared Alfredo sauce
2 cups diced potatoes-precooked found in the cheese/egg section
4 slices cooked and diced bacon or 1/2 cup diced ham
1/2 cup sliced green onions
2 stalk celery diced(use the leaves too!)
1 cup diced frozen carrots
1 clove garlic pressed or minced
2 cups frozen gnocchi
2 cups chicken broth(depending on how thick you like your soup)
1/4 cup velveeta cheese, cubed
1 cup fresh chopped spinach
1/2 cup julienned sun dried tomatoes in oil optional
for garnish
Directions:
In a microwave safe dish add the celery, garlic and green onions with 1 tablespoon of the chicken broth, cover and cook on high for 2-3 minutes until the celery is crunchy tender. Set aside
In a medium saucepan over medium/low heat add the chicken broth,and the potatoes. Cook until potatoes are fork tender.
Once the potatoes are tender, add the rest of the ingredients and cook over medium/low for 10-15 minutes or until everything is heated through and cheese is melted.
