This is a recipe that takes rancho huevos and put them in a burrito! Serve with a condiment smorgasboard of diced tomatoes, shredded lettuce, guacamole,black olives. Use Chorizo for an authentic feel to the dish.

Serves 6
1/2 pound of Chorizo or ground turkey sausage
cooked and crumbled
8 eggs made into scrambled eggs
1/2 cup of black beans
1 envelope low salt taco seasoning
2 cups shredded Mexican mix cheese
6 (8-10 inch)whole wheat burrito shells
1 cup salsa
1/2 cup velveeta cheese, diced
garnish
1 cup shredded lettuce
1 tomato diced
1 cup guacamole
sliced black olives
Shredded cheese
additional salsa

Directions:
In a large bowl; Mix cooked chorizo/turkey with the taco seasoning mix.
Add 1 cup of shredded cheese
1/2 cup black beans
Add cooked scrambled eggs to the mixture in the bowl. Mix gently so the eggs are not broken up too much.
Divide meat/egg mixture evenly between the 6 whole wheat burritos.
Roll them and place them in a microwave safe baking dish, seam side down.
In a small bowl mix the 1 cup salsa and velveeta and microwave on medium-high until the cheese is melted.
Remove from microwave and mix well.
Pour the salsa and cheese over the burritos.
Sprinkle the remaining shredded cheese over the sauce.
Microwave on Medium High(power level 5) until the cheese on top is just melted.
Serve with the garnish listed above.
