This is a variation of the BBQ Chicken Bake.
This works great for a quick evening meal too.
Serve 4-6
1 (12oz) tube of buttermilk biscuits
1 pound of ground turkey, cooked
1 envelope low sodium taco seasoning
1 1/2 cup shredded cheese, Monterrey jack, sharp or your favorite
3/4 cup mild salsa or taco sauce
1/2 cup green onions
1/2 cup sliced black olives-optional
1/2 cup jalapeno peppers-optional
2 Tablespoons chopped fresh cilantro
2 cups shredded lettuce for garnish
1 cup diced fresh tomatoes-for garnish
sour cream
guacamole
Directions:
Pre-heat oven to 350 degrees
In a skillet fry turkey until browned and no longer pink.
Add taco packet to the skillet and follow directions on the packet.
Grease an 8x8" baking dish
Open the tube of biscuits and place in a single layer on the bottom of the prepared baking dish
Sprinkle 1/2 cup shredded cheese on the biscuits.
Spread the taco meat mixture over the cheese.
Layer the olives, jalapenos, green onions on the taco meat.
Add the cilantro to the salsa and pour the salsa onto the mixture in the baking dish.
Sprinkle with 1/2 cup cheese.
Cover and bake for 25-30 minutes or until the biscuits are done in the middle of the pan.
Uncover and bake the last 5-10 minutes to brown the cheese.
Serve with shredded lettuce tomatoes, sour cream & guacamole.
