Makes 8 servings.

1 1/2 lb. pork tenderloin
3 sprigs rosemary, chopped
3/4 c. lemon juice
1 T. freshly ground pepper
1/2 c. olive oil
16 pearl onions

One hour prior to grilling, soak 8 bamboo skewers in water.
Cut tenderloin across the grain into 1 inch cubes; place in a large sealable bag.
Add rosemary, lemon juice, pepper and olive oil.
Refrigerate to marinate for 30 minutes.
Skewer pork, alternating with pearl onions and finishing with the pork on top; season to taste with salt and pepper.
Preheat grill to 375F (medium-high).
Place a 4 x 10-inch sheet of aluminum foil in the center of grill; oil grill to prevent sticking.
Grill until charred on the outside and perfectly cooked on the inside – about 12 minutes, turning the skewers ever 2 minutes.
