TOMATOES - BROILED WITH FETA CHEESE

Makes 4 servings.

4 large fresh tomatoes
4 oz. feta cheese, drained
1 T. chopped roasted red peppers
2 T. bread crumbs
1 T. chopped fresh basil
2 T. olive oil
salt and pepper

Preheat oven broiler.
Slice tops off tomatoes and remove seeds and pulp.
In a medium bowl, mix together feta cheese and red peppers.
Spoon an equal amount of cheese mixture into each tomato.
Place tomatoes upright in a baking dish; top each with bread crumbs basil.
Drizzle with olive oil; season with salt and pepper to taste.
Place under broiler for 5 to 10 minutes until cheese is warmed through and bread crumbs are lightly browned.
