Makes 16 servings.

1/2 c. mayonnaise
1/4 c. whipping cream
2 tsp. minced chipotle chile in adobo sauce
2 lb. cooked crab meat
salt and pepper
4 avocados, diced
2 onions, minced
2 jalapeno peppers, seeded, minced
1/4 c. chopped cilantro
1/4 c.. fresh lime juice
4 tsp. pure olive oil
8 dozen round tortilla chips
2 tomatoes, diced
small cilantro leaves for garnish

In a large bowl, combine the mayonnaise, cream and chipotle; fold in crab meat.
Season with salt and pepper to taste; refrigerate.
In another large bowl, combine the avocados, onion, jalapeno, chopped cilantro, lime juice and olive oil; stir to blend. Season with salt and pepper to taste; refrigerate.
To serve, put a heaping teaspoon of the guacamole on each tortilla chip, then spoon a tablespoon of the crab salad on top.
Garnish each with some chopped tomato and a cilantro leaf; serve on a platter.
