Makes 6 servings.

1 lb. breakfast sausages
1 onion, finely chopped
1 green pepper, finely chopped
2 garlic cloves, minced
1 T. vegetable oil
2 14-oz. cans stewed tomatoes, undrained
2 to 4 tsp. seeded minced jalapeno pepper
2 tsp. dried oregano
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. pepper
1 lb. tortilla chips, broken into pieces
6 eggs
1 c. shredded Old Cheddar cheese
1 c. salsa, warmed

In a large skillet, saute sausage pieces until well browned.
Transfer to a paper towel-lined plate to drain. Cut each sausage into three pieces.
In the same skillet, saute onion, green pepper and garlic in oil until tender.
Stir in sausages, tomatoes and seasonings; simmer, uncovered, for 15 minutes.
Toss in tortilla chips. Stir to blend; heat through.
Make six indentations in the tomato mixture with a spoon. Break eggs into indentations.
Cover and cook on low heat for 5 minutes or until eggs are set.
Sprinkle with cheese; cover and cook until melted, about 1 minute.
Serve with heated salsa.
