Ready in: 30-60 minutes

  • 2 onions, chopped
  • 2 tablespoons oil
  • 4 cloves garlic, smashed
  • 1 tablespoon chili powder
  • 1 can crushed tomatoes
  • 2 cups water
  • 4 cans red kidney beans, drained
  • 1 package frozen corn
  • 2 cups white rice
  • 3/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 8 tablespoons sour cream

In a pot, saute onion in oil 4 minutes. Add garlic and cook until onion is tender. Add chili powder and cook 1 minute.

Stir in tomatoes and water. Stir in beans, bring to a boil then simmer 20 minutes. Add corn, simmer 10 minutes.

Cook rice following package directions, adding salt.

Divide rice among serving plates. Top each with chili, shredded cheese and a dollop of sour cream.
