Cheddar Cheese Potatoes With Sour Cream

- 6 medium baking potatoes
- 2 1/2 cups grated sharp Cheddar cheese
- 1/4 cup butter
- 1 cup sour cream, at room temperature
- 1/3 cup minced onion
- salt and pepper, to taste
- paprika
Preheat the oven to 350 degrees F. Grease an 8-inch baking dish. Place the potatoes in a pan of boiling water. Cook until tender, about 15-20 minutes. Drain well. Let cool enough to handle then peel the potatoes. Shred the peeled potatoes and place in a large bowl. Heat the butter in a saucepan over medium-low heat. Add 2 cups of the shredded cheese and cook, stirring constantly, until just melted. Remove the pan from the heat and stir in the sour cream, onion, salt, and pepper. Stir the cheese mixture into the potatoes and fold to combine. Transfer the potatoes to the greased baking dish. Sprinkle the remaining cheese over the top and dust with paprika. Place the baking dish in the oven and bake at 350 degrees F for 30 minutes or until bubbly in the middle.
