Grilled Honey Glazed Salmon with Grilled Pineapple

- 1/2 cup orange juice
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon grated fresh ginger
- 12 slices fresh pineapple
- 6 salmon fillets or steaks
- salt and pepper, to taste
Preheat the grill to medium-high heat and grease the grates well. Combine the orange juice, brown sugar, mustard, honey, soy sauce, and ginger in a small bowl and mix until combined. Transfer 1/4 cup of the sauce to another container to use on the finished dish. Set both aside. Place the pineapple slices on the grill and cook for 2 minutes per side or until soft and lightly browned. Remove from the grill and place 2 pineapple slices on each individual dinner plate. Season the salmon with salt and pepper. Place on the grill and cook for 3 minutes. Baste with the honey-orange sauce then carefully turn the salmon over. Baste with the sauce and cook for 5 more minutes or until the salmon is cooked (it should flake easily with a fork). Place the salmon fillets on top of the grilled pineapple slices, drizzle with the reserved sauce, and serve immediately.
