8 oz boneless skinless chicken breasts
4 dried shiitake mushrooms, stems removed
1/2 tsp freshly ground black pepper
1 1/2 inch piece ginger root, chopped
1 carrot, peeled cut into eighths
2 green onions, cut into quarters
1 tsp rice wine or sherry and sesame oil
1 tbsp soy sauce
1/4 - 1/2 tsp chile paste or crushed red pepper flakes
3 tbsp dry Japanese bread crumbs or fine bread crumbs
4 sesame seen hamburger buns, toasted

Rinse chicken and pat dry; cut into 1-inch pieces.

Soak mushrooms in enough hot water to cover in bowl for 15 minutes; weight mushrooms to immerse completely. Drain and squeeze excess liquid from caps. Cut mushrooms into halves. Process ginger root in food processor until minced, scraping bowl as needed.

Add chicken. Process with on/off turns to coarsely chop. Stir in mixture of rice wine, sesame oil, soy sauce, chile paste, black pepper and bread crumbs. Shape into 4 patties.

Arrange patties on grill rack brushed with olive oil in covered grill. Grill over hot coals for 4 minute per side. Cook for 5 minutes longer, turning once. Serve on toasted buns.
