12 oz boneless, skinless chicken breasts, cut into 1/2 inch pieces
3 tbsp vegetable oil
1/2 tsp salt
4 oz fresh or frozen, thawed snow peas
1/4 cup whole blanched almonds
1/2 cup apricot preserves
1/3 cup chicken broth
1 1/2 tbsp soy sauce
1 1/2 tbsp cornstarch
1/8 tsp round ginger
4-5 cups hot cooked rice
Heat oil in a skillet and add chicken. Stir until browned. Sprinkle with salt. Add snow peas and almonds; cook and stir for 2 minutes.
Sauce: Mix preserves and next 4 ingredients and pour into skillet with chicken and vegetables. Heat to boiling, stirring constantly, until thickened. Serve over rice. Serves 4
