3 oz cream cheese, softened
1/4 cup mayonnaise
1/2 tsp salt
1/4 tsp ground black pepper
1/4 cup red and green bell pepper, chopped fine
1/4 cup celery, chopped
1/4 cup sweet pickle relish
2 tbsp fresh parsley, minced
8 eggs, hard-boiled, chopped

In a mixing bowl, beat cream cheese, mayonnaise, salt, and pepper until smooth. Add green pepper, celery, relish, and parsley. Fold in eggs. Refrigerate until serving. Yield: about 6 servings. Great on greens, in a sandwich, or on crackers.
